Quick Mix Salad w/ Greek Yogurt Dressing

Every other week we go down to a local neighborhood location and pick up a box of locally grown fruits and vegetables from the company abundant harvest. This week we got apples, bell peppers, carrots, chard, green beans, lettuce, parsnips, strawberries and summer squash. Usually we incorporate them into our dinner meals but for lunch I really wanted a salad. I looked in the fridge and decided to pretty much throw in everything I could find! Here’s what I came up with.

I used lettuce, green onions, avocado, black olives, pepperoni, mild cheddar jack cheese, carrot, celery, and green beans. I like to try different types of salad dressing and today I used OPA Roasted Red Pepper Greek Yogurt dressing. I also ended up adding a small handful of wasabi soy sauce Triscuit Thin Crisps to give it a little extra crunch. It was so delicious! What are your favorite things to put on salads?
